Set Cube Steaks out 30 minutes prior to preparation.
Combine flour, salt, pepper, garlic powder and onion powder in a shallow dish. In a second dish wisk together beaten eggs, hot sauce and 1/4 cup of whole milk.
Working with one steak at a time, coat the steak in the flour mixture, turning to coat both sides. Presss the flour into the meat. Place the steak into the egg mixture, turning to coat and then back into the flour. Repeat for any remaining pieces of cube steak.
Heat oil in a large cast iron skillet over medium high heat. Test the temperature of the oil by dropping in a few sprinkles of flour. The oil wil sizzle when ready. Carefully place two pieces of the steak into the oil and fry for 3 minutes on each side or until golden brown. Remove to a cookie sheet covered with aluminum foil and place in an oven at 300F until gravy is cooked and ready to serve.
After you have finished cooking the cube steaks, pour off half the oil leaving 1/4 cup of oil with all the little brown bits from frying the steaks. Wisk in the flour and cook for about two minutes. Pour in the milk wisking continuously. Add in the salt and pepper and continue wisking until the gravy is smooth and thick.
Spoon the gravy over the steak. Serve with a side of mashed potatoes and green beans. Yum!
