Wash the tomatoes and remove any stems. Quarter tomatoes and remove the seeds, core and surrounding gel. Using only the meaty flesh of the tomatoes, dice into 1/2 inch pieces.
Using Fresh Mozzarella Balls or packaged Mozzarella block cheese, slice the cheese into 1/2 inch cubes. Chop the fresh Basil and mince the garlic.
Combine all the ingredients in a bowl and toss with Olive Oil to coat.
Place a lid on the bowl or cover with plastic wrap and refrigerate for at least an hour.
Set the tomato and cheese mixture out of the refrigerator about 30 minutes prior to serving.
Spoon mixture on garlic toast to serve.
