Melt bacon greeae in a 2 quart saucepan over medium heat. Add onions and red pepper flakes and saute until onions are tender. There is no better smell than onions and bacon cooking together!
Add the black eyed peas, salt, pepper and water and bring to a boil. Boil for 1 minute stirring continuously. Reduce heat to to a simmer and cover saucepan with a lid. Cook for about 30 minutes.
Serve over white rice.
