Rinse rice in a mesh colander until the water runs clear. This removes excess starch from the rice and prevents it from being sticky.
Melt butter or olive oil in a 2 quart saucepan over medium heat. Add rice and stir to coat all of the grains of rice. Heat rice and butter for 2 minutes.
Add water and bring to a boil. Boil for 1 minute stirring continuously. Reduce heat to to a simmer and cover saucepan with a lid. Cook for 18 minutes. Resist the urge to peek inside. Do not remove lid for any reason!
Remove from heat. Now you can remove lid and fluff rice with a fork. Cover for and additional 18 minutes.
