Roasted Glazed Sweet Potatoes




Ingredients

  • 2 pounds of Sweet Potatoes

  • 2 tablespoons of Butter

  • 1/4 cup Brown Sugar

  • 2 tablespoons Maple Syrup

  • 1/2 Orange Juice

  • 1/2 teaspoon Cinnamon

  • 1/4 teaspoon Nutmeg

  • pinch of salt

Cut Sweet Potatoes

Cut and Ready to Boil


Directions

Start by peeling and quartering your potatoes. Add quartered sweet potatoes to a 2-quart saucepan of lightly salted water. You want your potatoes covered with water. Place a lid on the pan.

Boil the potatoes on high heat for about 10 minutes. Remove from heat and pour into a colander.

Use the same saucepan and melt the butter. Add the brown sugar and maple syrup. Stir until melted. Add the orange juice, cinnamon, nutmeg and a pinch of salt. Stir.

Spread sweet potatoes evenly in a 9 by 13 inch casserole dish. Pour spiced orange juice mixture over the sweet potatoes.

Bake uncovered at 350F for 30 minutes or until potatoes are tender.
