Slice bread 1/2 inch thick.
In a large bowl, beat eggs and milk together. Add sugar, cinnamon, nutmeg, vanilla and salt and whisk until well mixed.
Place bread slices into bowl and turn to coat. You want the bread to soak up the egg mixture.
Remove bread from bowl and grill the bread in either an electric skillet or traditional non-stick skillet about 3 minutes on each side until browned. Serve with banana slices and top with Maple Syrup.
