Dutch Loaf/Old Fashioned Loaf
Dutch Loaf, or sometimes called Old Fashioned Loaf, is a lunchmeat that mom bought when I was a kid.
I absolutely fell in love with the stuff. I've been searching all over south Florida for it, but it is no where to be found.
So, I decided I would just figure out how to make it myself!

Ingredients
- 3 pounds Ground Pork
- 2 pounds Ground Beef
- 1 teaspoon Curing Salt #1
- 4 teaspoons Salt
- 2 tablespoons Onion Powder
- 2 teaspoons Pepper
- 1 1/2 teaspoons ground Coriander
- 1 1/2 teaspoons ground Celery Seed
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/1/2 teaspoon ground Nutmeg
- 1/2 cup Cold Water

Mix the ground beef and ground pork together. Using your fingers, poke holes in the meat mixture, much like maked Focaccia.
Pour the seasonings into the water and stir until the salt, sugar and cure are completely dissolved. Pour the mixture over the meat and mix thoroughly.
Fill a loaf pan with the meat mixture and press down on the meat to ensure a firm and packed loaf.!
Place in a smoker at 225F using fruitwood chips (I use Apple wood chips) until an internal temp of 150F is reached. About 6-7 hours.
Remove from smoker and allow to cool completely. Wrap the loaf pan with plastic wrap and place in the refrigerator overnight.Remove from loaf pan and slice with an electric deli slicer.
